I was lucky to be invited to a very special dinner at Attica where star Danish Chef, Thorsten Schmidt from restaurant Malling & Schmidt in Århus, Denmark was the guest Chef for the night. Thorsten was flown in to Melbourne by Scandinavian Airlines in conjunction with the 2011 Melbourne Food & Wine Festival. Attica was packed for the night with anticipating guests, and Thorsten certainly did not disappoint. The night was marvelous, and Thorsten served up some real treats based on the New Nordic Cuisine Manifesto. On the menu was oysters served on a waterbed, ocean trout, reindeer cooked over open fire and wood (oak) icecream with black truffles.
